Born in Tunisia to an Algerian father and Sicilian mother, Lamia embodies the blend of Mediterranean cultures in the region. After two decades in the high-end hotel industry and extensive travel, she returned to Tunisia to manage a bed and breakfast on a farm in the Nabeul countryside, just a short drive from Cap Bon's beaches. Lamia also works as a sustainable tourism consultant, promoting eco-friendly practices in the industry. Fluent in Arabic, French, English, and Italian, she effortlessly connects with guests and partners worldwide.

These fragrant waters are used to flavor drinks, enhance dishes, and even serve as remedies or part of rituals, such as greeting guests by sprinkling the water on their hands or heads. Following a demonstration of the distillation process, you'll have the opportunity to participate in a hands-on workshop, learning to prepare harissa.     After a traditional Arbi breakfast, which translates to “rustic” in Arabic, you'll learn to prepare Mlawi, a flaky, pan-cooked flatbread. Often enjoyed in the morning, it is a staple of Tunisian street food, perfect for making portable wraps that are easy to eat on the go. Later, visit a nearby vineyard where you'll take a cellar tour, taste a variety of wines, and enjoy a barbecue lunch (méchoui) among the towering aging tanks. The vineyard gives a glimpse into Tunisia’s Roman and colonial past, offering insights into how grape cultivation continues to shape the country's culture today. In the afternoon, return to Lamia’s farm for a hands-on workshop where you will learn to make Malsouka. This delicate, thin pastry, similar to filo dough, is used in a variety of dishes, both sweet and savory.     Today, you will leave Lamia's farmhouse and be taken to the capital for a fresh fish lunch in La Goulette, a charming seaside neighborhood where actress Claudia Cardinale grew up. Once a place of coexistence between Italians, Maltese Christians, Jewish, and Muslim Tunisians, it now carries a sense of nostalgia. After lunch, you’ll visit the nearby archaeological site of Carthage, accompanied by an expert guide. This colonial building, dating back to 1891, blends Art Deco and Moorish styles and houses one of the largest and most atmospheric fish markets in the Mediterranean. Guided by a chef who has purchased fresh produce here for his family restaurant for over twenty years, the tour offers tastings, anecdotes, and insider tips on selecting the best ingredients. Afterward, you’ll head to the chef’s family-run restaurant, where you'll join the staff in the kitchen for a hands-on cooking experience. You’ll assist in preparing the daily specials, which you’ll enjoy for lunch. In the afternoon, the group will visit Sidi Bou Saïd, a picturesque village known for its white-and-blue buildings and named after the Sufi saint whose Zawiya is located here.
